11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed multiple bags of egg patties cooling tightly covered in the RIC in the main kitchen. Advised PIC that on proper cooling methods: under refrigeration loosely covered or uncovered. COS: PIC ventilated bags of egg patties for proper cooling.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed active leak at the 3-compartment sink in the main kitchen area. Advised PIC that a plumbing system shall be repaired according to law and maintained in good repair. Advised PIC to have the 3-compartment serviced.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed a container of single-service coffee stirrers stored unprotected from contamination at the self-service buffet area. Advised PIC except as specified in paragraph 4 of this subsection, cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored in a clean, dry location where they are not exposed to splash, dust, or other contamination. Advised PIC to obtain individually wrapped single-service stirrers or to obtain a dispenser in order to protect from contamination.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed the ambient temperature of the front self-service buffet reach in cooler with an ambient temperature of 45.3 F. Advised PIC Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2) of this Rule. Advised PIC to have unit serviced.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed nonfood contact surface of the interior of the front self-service reach in cooler stored as clean with severe rusting. Advised PIC nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Advised PIC to thoroughly clean all nonfood contact surfaces.
