Routine
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple TCS foods (bags of liquid eggs, containers of single-service cream cheese, single-service containers of yogurt) located in the reach-in cooler #1 cold holding in the temperature danger zone overnight. Advised PIC that all TCS foods shall properly cold hold at temperatures of 41 degrees F and below. COS: PIC discarded foods in the reach-in cooler #1.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Upon arrival, observed plastic measuring cup and utensil scrubber obstructing the designated handwash sink in the main kitchen. Advised PIC that all designated handwash sinks shall be maintained so that it is easily accessible at all times. COS: PIC removed plastic measuring cup and utensil scrubber from the designated handwash sink in the main kitchen area.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(b) - hand drying provision (pf)
Upon arrival, observed paper towels not supplied at the designated handwash sink. Advised PIC that Each handwashing sink or group of adjacent handwashing sinks shall be provided with individual, disposable towels, a continuous towel system that supplies the user with a clean towel, a heated-air hand drying device, a hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures. COS: Advised PIC to place paper towels near the designated handwash sink in the main kitchen area.
11D - thermometers provided and accurate
Regulation: 511-6-1.05(2)(x) - tmd, located in refrigerators/ hot holding (pf, c)
Observed missing hanging thermometers in all cold holding units, including the Reach-In cooler #1, Reach-In Freezer #1, and Reach-In Freezer #2. Advised PIC in a mechanically refrigerated or hot food storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot food storage unit. Advised PIC to obtain hanging thermometers in all cold holding units.
13A - posted: permit/inspection/choking poster/handwashing
Regulation: 511-6-1.07(3)(d) - handwashing signage (c)
Upon arrival, observed the designated handwash sink in the main kitchen area without proper signage to notify when employees shall wash hands. Advised PIC A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees and shall be clearly visible to food employees. Advised PIC to post proper notification signage for handwashing.

Upon arrival, observed the most recent inspection report not posted in public view. Advised PIC that the most recent inspection report shall be posted in public view at all times. Advised PIC to post the most recent inspection report.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Observed reach-in cooler #1 in the main kitchen area with an ambient temperature of 52 degrees F. Advised PIC that Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. Advised PIC to have unit serviced.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed nonfood contact surfaces of the interior portion of the convection oven and reach in freezer #2 stored as clean with old food debris. Advised PIC nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Advised PIC to thoroughly clean nonfood contact surfaces of the interior of the convection oven and reach-in freezer #2.
