Observed container of celery stored directly on top of raw chicken and raw chicken stored with raw fish in walk in cooler. Also observed raw fish and raw burgers stored with ready to eat sauces in walk in cooler. COS: PIC moved with proper separation, CA: Store food items according to final cook temp.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
Observed expired CFSM posted. Advised must obtain within 30 days. CA: Food service facility shall have valid CFSM.
4-2A - food stored covered

Observed TCS foods in reach in freezer & walk in cooler observed uncovered. COS: PIC placed cover. CA: Advised PIC that all food shall be covered to prevent contamination.

Observed cardboard on shelves throughout in main kitchen. Advised to remove. CA: Do not use cardboard to line equipment as it is not smooth, non-absorbent, and easily cleanable.

Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed prep top cooler at grill prep not maintaining temps of 41 degrees F or below. Advised must repair. CA: All equipment shall be kept in good repair and proper adjustment.

Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed non food contact surfaces on bins and containers with build up and in need of cleaning. Advised PIC to clean. CA: Equipment shall be kept clean.
