Observed food contact surfaces of multiple lids stored as clean stored as clean with staining and food debris. Advised PIC that food contact surfaces shall be cleaned to sight and touch. Advised PIC to wash, rinse, and sanitize food contact surfaces of lids.
15C - nonfood-contact surfaces clean

Observed nonfood contact surfaces of the interior of multiple warmer cabinets in need of cleaning due to excessive food debris at the front food service and main kitchen. Advised PIC that nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Advised PIC to thoroughly clean nonfood contact surfaces of the interior of warmer cabinets at the front food service area and main kitchen.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed a personal bag stored on a shelving unit directly next to single service items. Also observed a charger and personal beverage at the prep table. Advised PIC that Lockers or other suitable facilities shall be located in a designated room or area where contamination of food, equipment, utensils, linens and single-service and single-use articles cannot occur. COS: PIC had food employees remove all personal belongings and placed them in a designated area.
