6-1A - proper cold holding temperatures

Observed multiple TCS items (raw chicken, sliced cheese and cooked rice) cold holding in the temperature zone above 41 degrees at prep top cooler near the front food service area. Advised PIC that TCS foods shall properly cold hold at 41 degrees or below. COS- PIC moved items to WIC
2-2E - response procedures for vomiting & diarrheal events
Regulation: 511-6-1.03(6) - clean-up of vomiting and diarrheal events(pf)
Observed PIC not being able to provide procedures for vomit/fecal response. Advised PIC a food establishment shall have written procedures for employees to follow. Advised PIC to obtain vomit/fecal clean-up procedure. Repeat violation
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed visible light entry at the back door of the facility. Advised PIC outer openings of a food service establishment shall be protected against the entry of insects and rodents by solid self-closing tight-fitting doors. Advised PIC to place weather strip seal to prevent visible light entry.

Observed provisional permit expired and posted in public view. Advised PIC a provisional permit shall expire 60 days after issuance. Advised PIC to obtain permanent permit.

Observed prep top cooler 1 in the front food service area with an ambient temperature of 60 degrees and in disrepair. Advised PIC equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections 1 and 2 of this rule. Advised PIC to have units serviced
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed non food contact surfaces of the interior of the RIF in the main kitchen stored as clean with excessive food debris. Also observed non food contact surface of the interior of RIC with severe rusting. Advised PIC non-food contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue and other debris. Advised PIC to thoroughly clean interior of units.
