Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed lettuce, salads, and half and half stored in reach in cooler above 41F (see asterisked items on temp log). CA: TCS items shall be cold held at 41F and below. COS: PIC moved discarded food at time of inspection.
10D - food properly labeled; original container
Regulation: 511-6-1.04(4)(d) - food storage containers identified with common name of food (c)
Observed three bottles near grill not labeled with common name.
C/A: Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.

Observed multiple containers of food stored directly on floor of walk in cooler and walk in freezer. C/A: Food products must be stored At least 6 inches above the floor.

Observed scoops without handles stored directly in rice, soy sauce and sugar. C/A: scoops must have handle to be stored in food product. COS: PIC removed scoops at time of inspection

Observed scoop for rice stored in ice water beside rice cooker.
C/A: Utensils stored in water must be stored in in running water of sufficient velocity to flush particulates to the drain, or water at 135f or hotter.
COS: PIC removed utensil from ice water and placed in 3 comp sink to wash, rinse and sanitize.
