Observed 3 bottles of sauce toppings stored outside their original container without labels on prep top cooler in main kitchen.
CA: Food items stored outside their original container shall be labeled with their common name in English.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping cloths stored in a sanitizer bucket with a concentration of 200ppm chlorine.
CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration of 50-100ppm chlorine.
COS: bucket was remade to 100ppm chlorine
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed ice cream scoop with handle touching the ice cream in display case in main kitchen.
CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container.
