6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Several marinara sauce (51F) containers and ricotta cheese (47F) stored inside the reach in cooler in the kitchen held cold holding temperatures above 41F. CA TCS food items must maintain cold holding temperatures at 41F or below. COS TCS food items were discarded.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Food debris, grease accumulation and dirt buildup was observed on the floor underneath the stove, fryer and 3-compartment sink. The vent on the ceiling inside the kitchen was observed hanging and not in place. The ceiling tile near the back door was observed missing. Several countertop tiles were observed missing on the front prep line near the hand sink. CA Physical facilities must be maintained and in good repair.
