6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed two containers of salad out of their original containers in the walk in cooler not properly date marked. PIC stated that he wasn't sure when they were put in. CA: Except when packaging food using a reduced oxygen packaging method, and except as specified in paragraphs 5 and 6 of this subsection, refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation shall be counted as Day 1. PIC voluntarily discarded the two containers of salad that were out of their original containers and will make sure that all salad and other food items are properly date marked.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed an employee handling food without proper hair restraint. CA: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. PIC will purchase the employee proper hair restraint.

Regulation: 511-6-1.05(2)(a) - equipment and utensils, constructed of durable materials (c)
Observed a household microwave towards the front kitchen area. CA: Equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions. PIC will replace house hold microwave with an approved commercial microwave.
