Observed an expired CFSM certificate (10/11/24) for the facility. PIC stated that they did not know it was expired. CA: Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) as specified in paragraph (b) of this subsection to ensure food safety is being managed within the food service establishment during all hours of operation as specified within paragraph (d) of this subsection. PIC will have CFSM certificate by Friday 2/28/25.

Observed a toaster and mixer that were not commercial grade. CA: Food service equipment must be commercial grade equipment and designed and built according to standards set by American National standards Institute (ANSI) accredited certification programs. Such an accredited program includes, but is not limited to, one offered by the National Sanitation Foundation, or Underwriters Laboratories. Food equipment that is certified or classified for sanitation by an American National Standards Institute (ANSI) accredited certification program is deemed to comply with subsections (1) and (2) of this Rule when used for its intended purpose. PIC will have toaster and mixer replaced with commercial grade ones.

Observed that PIC could not provide documentation or otherwise satisfactorily demonstrate during the inspection, that all food employees and conditional employees are informed of their responsibility to report to management information about their health and activities as it relates to diseases that are transmissible through food. CA: The permit holder shall require food employees and conditional employees to report to the CFSM and person in charge, information about their health and activities as they relate to diseases that are transmissible through food. A food employee or conditional employee shall report the information in a manner that allows the CFSM and person in charge to reduce the risk of foodborne disease transmission, including providing necessary additional information, such as the date of onset of symptoms and an illness, or of a diagnosis without symptoms. PIC was given a copy of the employee health policy on today (07/09/2024) and stated that she will make sure employees read over the policy and sign.

Observed sugar scooper in scooper bin under prep table in middle of kitchen area with handle in contact with sugar. CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored such as scoopers shall be stored with handle up. PIC placed handle up in sugar bin under prep table in middle of kitchen area.

Observed no test strips available for testing sanitizer levels. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. PIC will purchase test strips as soon as possible.

Observed several food items not labeled with common food name. CA: Label information shall include: The common name of the food, or if there is no common name, an adequately descriptive identity statement. PIC will have food items labeled with common food name.

Observed employee in kitchen not wearing a proper hair restraint. CA: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. COS PIC had employee put on hair restraint.

Observed a crock pot, nuwave, and skillet that are not commercial grade. CA: Equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions. PIC will remove crockpit, nuwave, and skillet.
