Observed all the food in the cold holding unit (top and bottom) to be above 41 degrees F. (cheese 61, sauce 59, beef 60 etc) Disussed with PIC and learned that the unit was unplugged when he came in this morning. He plugged it in and waited for it to cool down. The unit was very full so it was unable to cool quick enough. It has not been plugged back in for 5 hours and still out of temp. CFSM was called. All the food in this cooling unit was discarded by PIC. COS
