MCALISTER'S DELI

Upon entry observed employees working in kitchen without a proper hair restraint. Hair restraint was put on once it was noticed that I was there. An employee is also working with a hair tie around her wrist. CA: Ensure proper hair restraints and nothing on hands or wrists but a plain band.

Observed areas under equipment, prep surfaces, inside and around cold holding units and gaskets in need of cleaning. CA: Clean areas thoroughly and routinely.

Observed inside of ice machine with build-up and drink nozzles in need of cleaning. CA: Clean ice machine and drink fountains thoroughly and routinely to prevent contamination.

Observed a bag of prepackaged boxes of meals stored on the floor in the walk-in cooler. CA: Food product should always be stored at least 6-inches above ground to prevent contamination. Food was also stored near leak in walk-in cooler.

Observed employees working with food product on cook lines wearing watches and rubber bracelets. CA: Employees working with food are only allowed to wear a plain band.

Observed areas under equipment, prep surfaces, inside cold holding units and around them, and gaskets in need of cleaning or torn in salad holder. CA: Clean areas thoroughly and routinely to remove debris and prevent pests. Replace gasket to ensure units holds temperature.

Observed several employees wearing watches and bracelets while preparing food. CA: No watches /jewlery on wrists or forearms if cooking, preparing or handling food. COS (Warned on last inspection)

Observed build up and rust (?) on the surface of the refrigeration units (doors). CA: Eliminate rust and food buildup.

Observed dirt/debris on the floors- under equipment and shelving. CA: Deep cleaning needed floor to wall.
