6-1A - proper cold holding temperatures

Observed zip lock bags with gravy, eggs, sausage and potatoes that were being cold held in the reach in cooler in the kitchen at temperatures greater than 41. COS, PIC called the kitchen manager and she stated the items were placed in the cooler after breakfast around 10:30 this morning. PIC discarded the items. Coached on the cooling process.
