Observed heavy pink/black build up on baffle wall of ice machine. Food contact surfaces should be cleaned frequently to prevent accumulation.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed multiple wiping clothes stored throughout the kitchen. Cloths used for wiping counters and equipment should be held in chemical sanitizing solution in between uses.
