Observed no hand drying provisions at handwash sink in main kitchen. Employee replenished paper towels during inspection.

Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed mechanical dishwashing machine not testing to minimum concentration. Utilize three-compartment sink for washing and sanitizing dishes until mechanical dishwashing machine is functioning appropriately.
