Observed multiple pans of cooked meat stored uncovered in walk-in freezer. Observed diced onions, diced tomatoes, prepared cilantro, and sliced peppers stored uncovered in reach-in-cooler. Washed and prepared foods shall be stored covered to prevent contamination. Foods covered during inspection.

Observed tortillas stored on dry storage shelf next to trash can. Food shall be stored where it is not exposed to splash, dust, or other contamination. Trash can relocated during inspection.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed bowls being used as scoops in spices on dry storage shelf and in with raw chicken and beef in reach-in cooler. Scoops must have handles to prevent contamination and be stored above the surface of food contents in bulk storage containers. Manager removed bowls during inspection.
