Observed employee return from outside with gloves and apron on, he walked directly to the kitchen and begin to plate food. PIC informed the employee to stop; he discarded food and gloves then washed hands. Advised PIC that single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation.

Observed temperature control for safety foods held above 41F in walk-in cooler, including raw, marinated steak at 45F and raw, marinated fish at 45F. Person in charge disposed of items during inspection.

Observed sanitizing bucket stored next to single-serve items in main kitchen and next to napkins and straws in bar area. Sanitizing buckets should be stored below and separated from food. Person in charge relocated buckets during inspection.

Observed multiple wet cleaning rags sitting on countertops. wet cleaning rags moved during inspection.

Observed no parasite destruction letter for tilapia used to make ceviche. PIC will stop serving tilapia until a parasite destruction letter can be provided.

Observed raw fish stored in between ready-to-eat hotdogs and apple sauce in the reach in cooler and raw beef over cooked beef and chicken in the walk-in cooler. Items moved during inspection.

Observed inadequate light intensity in the walk-in cooler.
