Observed dried dough inside stand mixer in back kitchen. Equipment should be cleaned and sanitized after usage. PIC cleaned equipment during inspection.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed food build up on fryers, under three compartment sink and behind hard-to-reach areas throughout main kitchen. Non-food contact surfaces should be cleaned frequently to prevent accumulation.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee food stored on prep table in front food service area. Employee items should be stored in a designated area to prevent contamination. Employee moved item during inspection.
