Observed black build up in soda nozzles, baffle of ice machine and back wall in ice drop. Food-contact surfaces should be cleaned frequently to minimize accumulation.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed no date labels on food items in walk-in cooler, including taco meat, rice and cooked shredded chicken. Food items held for more than 24 hours should bear a date label. PIC added date label during inspection.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(g) - chemical sanitizers, criteria (p)
Observed chlorine sanitizer bucket at 200ppm exceeding recommended limits for consumer safety. PIC remade sanitizer bucket during inspection.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
Observed employee phone on charger, another employee phone and employee cup stored on dry food items on storage shelf. Employee should be stored in a designated area and away from consumer items. PIC moved employee item during inspection.
