Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed multiple prepped food items without date labels in prep-top cooler and reach-in cooler. Food items stored for more than 24 hours or taken from original container should be datemarked. All food items discarded during inspection.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed sanitizing buckets stored next to food equipment and dry food. Observed espresso machine cleaners stored on shelf with dry food. Chemicals should be stored away from food, equipment, utensils, linens and single use items. PIC moved chemicals during inspection.
