4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(o) - manual warewashing equipment, chemical sanitization using detergent sanitizers(c)
Observed chlorine sanitizer water solution in bucket at a concentration of 25PPM used to clean food contact surfaces ( cutting boards, countertops). Staff and PIC informed that the sanitizer shall be between 50PPM and 100PPM and that the current sanitizer is at 25PPM. Food handlers continued using sanitizer to clean food contact surfaces. PIC stepped in and advised food handler to change sanitizer. COS- chlorine sanitizer water solution remade to 100PPM.

Observed 2 Scissors stored as clean in a utensil/ knife holder unclean with an accumulation of food debris. Observed Utensil/ knife holder which is attached to the wall unclean with accumulation of food debris and dust. CA: Food contact and non food contact surfaces shall be cleaned regularly and by sight and touch to prevent build up. COS- Scissors moved to 3 compartment sink and PIC washed, rinsed and sanitized knife holder.

Observed cup holder where the food contact surface of the cups are directly touching, unclean with an accumulation of dust debris. CA: Food contact and non food contact surfaces shall be cleaned regularly and by sight and touch to prevent buildup. COS- PIC started to clean equipment.

Observed 6 bottles of sauces not labeled. CA:. Label information shall include:
(i) The common name of the food, or if there is no common name, an adequately descriptive identity statement.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed pans stacked wet. CA: All dishes shall air dry completely before stacking.
