Observed a pan of cooked rice hot holding at 120F, located on a shelf underneath the steam table. CA: TCS foods shall hot hold at 135F or higher. COS: PIC voluntarily discarded the cooked rice. Discussed using effective methods to hot hold TCS foods (steam table, hot water bath on stove top, etc.)
