Regulation: 511-6-1.03(1)(c)17 - demonstration (pf)
PIC could not demonstrate knowledge of reporting for all employees. PIC could not provide employee reporting agreement for himself. Advised Pic to have employee agreements for all employees conducting food service.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.05(10)(b) - wiping cloths, air drying location (c)
Observed several wiping cloths being stored on the counter top. Advised Pic that used wiping cloths should be stored in the sanitizer buckets. Cloths were removed and stored in sanitzer buckets.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(j) - mechanical warewashing, wash solution temperature (pf)
Mechanical dishwasher, hot water sanitization, did not reach 180 F on final rinse. Advised Pic to only manually wash dishes until dish washer is repaired. Sign was posted on dishwasher that stated "Do not use".
