Observed shredded cheese on main line holding above 41F without being under temperature control. See * in temp log. COS: cheese discarded and replaced with more cheese that was cold-holding 41F and below and were placed on ice. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below.
