Observed a container of tomato pizza sauce being held without temperature control and without proper procedures or logs/labels in place. Advised PIC that if TCS foods are held without temperature control, there must be approved written procedures established and logs/labels must be used to identify the foods using TPHC (time as a public health control). Advised to put label on pizza tomato sauce every 4 hours. Every 6 hours if food has not exceeded 70 degrees. COS: PIC placed TPHC procedure on time log where they also have their pie dough logs. Observed time and temperature control procedure on pie dough.
