Observed food stored in reach in freezers in main kitchen uncovered. Advised PIC all food items shall be stored covered unless actively cooling and protected from overhead contamination.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping cloth stored in soap water at front food service. Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution that is EPA registered at a concentration according to instruction on chemical labelling.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used

Observed cardboard lining floor of walk in freezer. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Observed accumulation grease and food debris on equipment (fryers, reach in freezer, exhaust hood, microwave, shelves, prep top cooler) in main kitchen. CA. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation grease and food debris on floor, in between equipment (fryer and reach in freezer) in main kitchen. Advised PIC to conduct thorough cleaning of said areas. CA. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.

Observed pitted tiles in main kitchen with accumulation of grease. PIC advised to clean and fill out pitted areas as water and settling causing odor. All physical facilities shall be maintained in good repair.
