11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed 3 bins of raw beef not actively being prepped store under a prep table thawing at room temperature. CA: Advised PIC Except as specified in paragraph 4 of this subsection, time/temperature control for safety food shall be thawed:

Under refrigeration that maintains the food temperature at 41°F (5°C) or less; PF or
-
Completely submerged under running water:
(i) At a water temperature of 70°F (21°C) or below. COS: Food employee placed bins back inside the walk-in cooler
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(b) - cutting surfaces (c)
Observed the stand alone prep top cooler across from the fryer in need of resurfacing or replacing, heavily stained cutting board. CA: Advised PIC Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they cannot be resurfaced.

Observed food debris and food splatter along the bottom of 2 double door reach-in coolers next to the walk-in coolers. CA: Advised PIC Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. COS: Food employee cleaned during time of inspection

Observed 2 heavily rusted racks inside walk-in cooler #1 and 1 rusted rack inside walk-in cooler #2. CA: Advised PIC Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed food splatter along a rack inside walk-in cooler #2. CA: Advised PIC nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed heavy debris accumulation underneath cooking equipment, racks and shelves in the main kitchen. CA: Advised PIC all physical facilities shall be maintained in good repair.
