Observed several bowls and plates stored as clean in the dish area and on buffet line for customer use with food debris, stains, and sticker residue. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. Suggested peeling off stickers before washing dishes so that the residue does not remain and to thoroughly check all bowls and plates for stains and food debris after cleaning. Any excessively stained food equipment shall be replaced. COS: bowls and plates taken to dish area to be washed and sanitized again.

Observed sanitizer buckets (inspector did not see wiping cloths used during inspection) reading 0ppm lactic acid/DDSA. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). COS: all buckets added with more sink and surface sanitizing solution to read between 272-700 DDBSA and 704-1875 lactic acid. Ecolab was called during inspection and repaired sanitizer dispenser so that the concentration determined by the manufacturer will dispense each time which is between 272-700 DDBSA and 704-1875 lactic acid.

Observed fully cooked sausage stored below raw beef and raw fish. COS: PIC relocated sausage to another cooler so it is stored according to final cook temperature.

Observed the foods using TPHC with incorrect labels. Labels were not changed after the 4 hours even though the foods were leaving the foods using TPHC without proper time stamps. COS: correct time stamps placed on the following foods: spaghetti, marinara sauce, butter (regular and honey), dressing, gravy

Observed 2 ice machines unclean with black organic like growth on the inside. Discussed proper cleaning of ice machines. COS: PIC stopped use of ice machines and started cleaning process.
