1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
Observed no current CFSM in the facility. CA: Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) as specified in paragraph (b) of this subsection to ensure food safety is being managed within the food service establishment during all hours of operation as specified within paragraph (d) of this subsection. Advised the PIC to schedule a test date and send information to inspector.
4-2B - food-contact surfaces: cleaned & sanitized

Observed multiple equipment, and utensils stored as clean with dirt and food accumulation in the dry storage area. CA: Cleaning of Equipment and Utensils.
(a) Equipment, Food-Contact Surfaces, and Utensils.
- Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: PIC removed the equipment and utensils to the 3 compartment sink to be washed, rinsed, and sanitized.
