Observed TCS food such as lettuce, dice tomatoes and oven roasted turkey thawed in room temperature. CA: TCS food thawing process shall be thaw in the fridge, as a cooking process, in the microwave then immediately cooked , or in a running water with a temperature of 70F. COS: The TCS food products were placed in the freezer/cooler.

Observed employee wearing bracelet while handling ready to eat food. COS- Bracelet was removed and hands were washed and sanitized. Food items were already being discarded by employee. Advised employees no arm jewelry shall be wore while handling food for sale.

Observed employees handling food items without gloves wearing artificial nails. Employees shall keep their fingernails clean and trimmed to no longer than the tips of the fingers. Unless wearing gloves in good repair, a food employee may not wear fingernail polish or artificial fingernails when working with exposed food.COS- gloves were put on by employees and advised of rule.

Observed two personal cups stored on top of ice machine. COS- cups were removed from kitchen. Areas designated for employees to eat, drink, and use tobacco shall be located so that food,equipment, linens, and single-service and single-use articles are protected from contamination.
