6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS (time/temperature controlled for safety) food items in the walk-in-cooler cold holding above 41F, temperature notated by asterisks (*) in the temperature log. During inspection, it was noticed that the walk-in-cooler door was being left open frequently. Upon checking the ambient temperature of the walk-in-cooler, it was observed at 44F. CA: TCS foods shall be cold held at 41F or lower. COS: After keeping the cooler door closed for about 20 minutes, observed the ambient temperature at 40F. PIC called maintenance to check on the cooler and to reduce the holding temperature and repair the door so it self closes. They arrived during the end of inspection. Observed food items previously checked cooled to 42F. Observed ambient of cooler at 38F.
