AT BASE OF OPERATION Observed cooked ribs 73, Cooked Chicken at 51, and pulled BBq at 71 degrees Cooked last night finished cooking at midnight CFSM left at 2 am without temping food items prior to putting them in Stand up Cold hold unit. Also when discussing cooling parameters CFSM was under the impression that cooling began when he removed from cooking process. All food was discarded -- Corrected on site and discussed proper cooling methods with CFSM
