12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Sanitizer buckets vs Spray bottle and dry cloth both methods were being used --- when asked pic questions about cleaning method bucket. Stated they were using a cloth with the spray bottle. Discussed properly needing to use a disposable napkins.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Observed CH Stand Up Unit in front service line not maintaining proepr cold hold ambient temp at 41 degrees or below -- 3 thermometers were in unit --- NO food was in the unit. the Thermometer 1 56 degrees, 2nd thermometer 54 degrees and digital outside thermometer 53 degrees. Unit needs to be assessed and repaired prior to storing food in unit. Once unit is fixed with 72 hours -- Please notify health department when fixed. Seals to cold hold units need to be cleaned
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(f) - lighting intensity, adequate in food prep, storage & service areas (c)
Lights out in store room. PIC will have repaired within 1 week
