2-2A - management knowledge, responsibilities, reporting
Regulation: 511-6-1.03(2)(o) - person-in-charge duties (pf)
PIC Could not produce the employee health policy and or could not find documentation of employee agreements. Gave them adequate time for multiple staff members to pull up information.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed staff not using 2 part sanitizer to clean table tops and food prep surfaces. Staff was observed using detergent in 1 bucket and sanitizer in the second bucket. The 2 part cleaning consist of 2 bucket both having adequate sanitizer in each bucket being utilized to clean table tops etc.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
salad and pico de gallo tomato mix were the only 2 items on the front serving line out of temp all other items were at 39 degrees and below and the unit was adequately working. Also was determined that the stand up cold hold unit that they were stored in overnight was adequately working--- deduced that the prep and set up process for the food prep serving line process may need to be reworked... possibly pulled those 2 items from fridge and put on cart to roll to front food prep 1st and they sat on the cart while other preparation was being completed causing them to be out of temp.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed individual cups and employee food and personal belongings and an umbrella and jacket sitting above and hanging beside touching single service food storage containers. A designated area to store employees food and personal belongings needs to be designated and utilized. Personal items should not come in contact with food service food, equipment or serving containers or utensils.
