2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed hand wash sink being blocked by clean dishes. Hand wash sink must remain unobstructed at all times for employees to wash hands. OUT AT BASE OF OPERATION
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed food Prep counter, not in use instant pot and can opener cutting blade with food debris on components. Surfaces and equipment need to be cleaned and sanitized frequently to avoid accumulation of debris. Out at BASE of OPERATION
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(z) - miscellaneous sources of contamination (c)
Observed Knife blades *2 sitting between wall and food prep counter. Knives need to be cleaned and sanitized and properly stored to where cross contamination factors will not become as issue. OUT at BASE
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.05(10)(b) - wiping cloths, air drying location (c)
Wiping clothes found sitting at 3 compartment sink drying on top of clean dishes. Also, observed sitting on top of dust pan which is sitting on top of open storage container of knives. When not in use, wiping clothes need to be store in sanitizer solution and or in laundry receptacle. Out at base
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(u) - condenser unit, separation (c)
Observed condensation coming from condenser at ac unit dripping on to wall shelve above 3 compartment sink being captured by a rag then the rag was dripping on to bottles. Condenser needs to be repaired. and all food spices need to be removed from the area of leaking content.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(m) - maintenance tools, storage (c)
Observed tools mixed in with cooking equipment. Need to be in Designated location away from food equipment and or food. Out at base Also, Ceiling panel is falling at base of operations and need to be fixed so that the wood is not exposed. Also, outside base of operation there is several pieces of equipment (not in use) sitting around... Equipment needs to be cleaned and stored away from base of operations as to not create harborage.
