6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed raw chicken in the prep top area not being maintained at 41 41 degrees Fahrenheit or below. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS PIC threw away the out of temp chicken at the prep top area.
18 - insects, rodents, and animals not present

Observed two fly traps hanging from the ceiling in the back of the main kitchen area near the grill and three compartment sink. CA: Insect control devices shall be installed so that: The devices are not located over a food preparation area; and Dead insects and insect fragments are prevented from contact with exposed food; clean equipment, utensils, and linens; and unwrapped single-service and single-use articles. COS PIC removed the fly traps from the ceiling.
