OBSERVED SODA NOZZLES IN THE LOBBY AREA WITH AN ACCUMULATION OF DARK DEBRIS. OBSERVED 6+ LADELS AND 6+ STAINLESS STEEL CONTAINERS STORED AS CLEAN IN THE WAREWASHING AREA WITH FOOD DEBRIS STILL ATTACHED. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. COS: PIC REMOVED ITEMS FOR PROPER CLEANING.

OBSERVED SEVERAL STAINLESS-STEEL CONTAINERS STACKED WET IN THE WAREWASHING AREA. CA: Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:

Shall be air-dried or used after adequate draining before contact with food; and

May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.
