6-1D - time as a public health control: procedures and records
Regulation: 511-6-1.04(6)(i) - time as a public health control (tphc) (p, pf, c)
Observed establishment utilizing time as a public health control without having written procedures or time labeled on foods using time (pepperoni pretzel and pig-in-blankets). CA: If time as a public health control is used for ready-to-eat TCS food that is displayed or held for sale or service, written procedures shall be prepared in advance, maintained in the food service establishment, and made available to the regulatory authority upon request. The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Partial correction on site - PIC labeled pepperoni bites and discarded the pig in a blankets. Time procedure must be corrected within 10 days.

Observed the only handsink in front service area with a temperature of 63 degrees F. CA: A handwashing sink shall be equipped to provide tempered water at a temperature of at 85 degrees F. Must be corrected within 10 days least 85°F (29.4°C) through a mixing valve or combination faucet

Observed ice scoop with handle in contact with ice. CA: During pauses in food preparation or dispensing scoops must be stored in a clean protected location
