Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed the following foods stored uncovered: 2 salts in a container and 4 fruits in a container on bar counter top; 4 containers of foods including lettuce and sliced tomatoes in the salad prep area of main kitchen; 12 containers of foods in ice bath area above grill in grill prep area of main kitchen (including marsala and creamy mushroom sauces, mac and cheese stored uncovered; 6 containers of food in ice bath across from grill in grill prep area of main kitchen (including mozzarella and feta cheeses) and 7 foods in steam table in serving line area of main kitchen (including marsalas, marinara and meat sauces). CA: Foods must be stored covered. COS: PIC covered all foods listed above
