6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed the following TCS food cold held above 41 degrees F:1 package of sliced cheese, 1 container of sliced cheese, sausage, raw egg, fried eggs, scrambled eggs and mix of sausage and egg. CA: TCS foods must be cold held at 41 degrees or below. Must be corrected in 3 days.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(a) - equipment and utensils, constructed of durable materials (c)
Observed cardboard being used on floors under and next to equipment in the main kitchen. CA: Nonfood contact surfaces of equipment must be constructed of corrosion resistant, nonabsorbent, and smooth materials.

Observed accumulation of food debris on mixing bowl, equipment and floors in back of main kitchen. Observed accumulation of brown residue building up on hood filters in main kitchen CA: Maintain cleaning frequency of all non-food/food contact surfaces
