Observed employee drinks stored in open, reuseable cups and observed that all employee drinks were stored with and above food and food contact surfaces. COS. Removed. CA: Employee drinks shall be in a single-use container with a lid and a straw and handled properly to prevent contamination of food and food contact surfaces.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed that the facility was attempting to cool pasta by wrapping the warm pasta in saran wrap, stacking them into dense containers, and then placing them into a small cooler. COS. Items removed and broken down to allow to cool. CA: Cooling methods shall be appropriate to help ensure that the food cools in the required timeframe.
12D - washing fruits and vegetables
Regulation: 511-6-1.04(4)(g) - washing fruits & vegetables (pf)
Observed that the facility had raw chicken in their vegetable sink. COS. Removed; sink was washed, rinsed, and sanitized. CA: Vegetable sinks shall only be used to prepare produce and to prepare/thaw not raw ready-to-eat food.
16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Observed that the facility has installed a new dishmachine and the theoretical peak hot water demand is no longer being met. CA: Facility shall ensure that the theoretical peak hot water demand is met.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Observed cardboard being used in facility as shelf lines. COS. Cardboard removed. CA: Nonfood contact surfaces shall be made of material that is durable, corrosion-resistant, and nonabsorbent.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee personal items stored on food contact surfaces; observed dirty tennis shoes next to the screens the pizzas are placed on to cook and observed backpacks/jackets stored on top of food/drink containers. COS. Items were moved. CA: Employee belongings and activities shall be in designated areas that prevent contamination of food and food contact surfaces.
