11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed that the facility was attempting to thaw frozen salmon by placing it in a container sitting out at room temperature and observed that the facility was thawing raw, frozen shrimp in the meat sink using hot running water. COS. Salmon placed into a refrigeration unit and water changed to cold water for the shrimp. Code: Thawing shall occur using an approved method such as under cold running water, by placing in refrigeration, by microwaving and immediately cooking, or by cooking from frozen.
12C - wiping cloths: properly used and stored

Observed wet wiping cloths stored on counters in both the front of house and back of house. COS. Placed into sanitizer solution. Code: Wet wiping cloths shall be stored in sanitizer solution that is at the appropriate concentration between uses.
