11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed that the facility was attempting to cool hot pasta by placing it in a densely packed bus tub, with the lid on, and in a cooler. COS. Lid removed and items removed from the cooler to allow for heat to escape prior to placing in the cooler. CA: Cooling methods shall be appropriate and ensure that the product reaches the required time and temperature benchmarks.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed employee preparing food while wearing a watch. COS. Removed. CA: With the exception of a plain band ring, no jewelry may be worn on the hands or wrists while preparing food, to include medical information bracelets.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wet wiping cloth stored on the counter. COS. Placed into laundry. CA: Wet wiping cloths shall be stored in sanitizer solution at the appropriate concentration betweeen uses.
13A - posted: permit/inspection/choking poster/handwashing
Regulation: 511-6-1.02(1)(d) - displaying of the inspection report (c)
Observed that the inspection report was posted behind the counter where it was not readable from a distance of 1 foot away. CA: The most recent inspection report shall be posted within 15 feet of the primary door, 5-7 feet from the floor, readable from a distance of 1 foot away, and in a conspicuous place.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed damage to ceiling tiles, coving, and walls; observed accumulation of debris under shelves and equipment. CA: Facility shall be maintained in a state of good repair; facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee phone stored with and above food and food contact surfaces. COS. Removed. CA: Employee belongings and activities shall be in designated locations that prevent contamination of food and food contact surfaces.
