11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed that the facility had cooked macaroni and pasta that they were attempting to cool by placing into deep, filled pans, covered with lids, and then stacked on top of each other; this method of cooling is not productive to cooling. CA: Cooling methods shall be appropriate to ensure that food reaches the required time and temperature requirements.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed food stored on the floor; observed no splash guard between the veggie sink and meat sink, foods were exposed to splash between the two sinks. COS. Moved food off of floor; splash guard will be installed and corrected soon. CA: Food shall bestored at least 6 inches off of the floor; food shall be protected from contamination.
13A - posted: permit/inspection/choking poster/handwashing
Regulation: 511-6-1.02(1)(d) - displaying of the inspection report (c)
Observed that the most recent inspection report was posted behind the bar. CA: The most recent inspection report shall be posted within 15 feet of the front door, 5-7 feet from the floor, readable at a distance of 1 foot away, and in a conspicuous place.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(a) - equipment and utensils, constructed of durable materials (c)
Observed many chipped plates. COS. Removed. CA: Equipment and utensils shall be designed of durable materials that retain their characteristics.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed that the facility did not have test strips for the Purrell Food Surface Sanitizer that they use. CA: Facility shall have the means to test each type of sanitization method used.
