Observed employees preparing food while wearing jewelry. COS. Removed. CA: With the exception of a plain band ring, no jewelry may be worn on the hands or wrists while preparing food to include medical information bracelets.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed in-use utensils stored in stagnant, not-hot water. COS. Dipper well turned on. CA: In-use utensils shall be stored using approved means such as in running water, in hot (135 F) water, in/on a clean container/surface, or in product with the handle above the level of the product.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed accumulation of debris on the inside of equipment. CA: Equipment shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Observed that the front brick wallin the food service area was not properly sealed/was not smooth and easily cleanable; wall is rough to the touch. CA: Walls shall be easily cleanable.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(f) - lighting intensity, adequate in food prep, storage & service areas (c)
Observed that the light in the walk-in used for alochol was out. CA: Lighting intensity shall be appropriate.
