Observed that the hand sinks in both restrooms are automatic/self-metering, but they do not run for at least 15 seconds. Code: A self-closing, slow-closing, or metering hand sink faucet shall provide a flow of water for at least 15 seconds without the need to reactivate the faucet.

Observed that the hand sink near the door leading into the kitchen near the preparation area was blocked by a speed rack. COS. Moved. Code: Hand sinks shall be kept clear and accessible.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed front of house staff that was preparing drinks while wearing a watch. COS. Removed. Code: With the exception of a plain band ring, no jewelry may be worn on the hands or wrists while preparing food.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed a scoop stored in cut apples with the handle being stored in contact with the product. COS. Removed; facility opted to discard the apples. Code: Scoops shall have handles and handles shall be stored above the level of the product.

Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed an accumulation of debris inside of reach in coolers and reach in freezers in the main kitchen. Code: CA: Equipment shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of debris on floors in the main kitchen under/behind equipment, as well as standing water beneath the three-compartment sink. Code: Facility shell be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation.
