Observed employee drinks stored with and above food in bottles. COS. Removed. CA: Employee drinks shall be stored in a single-use container with a lid and straw and handled to prevent contamination.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed the sanitizer in the 3-compartment sink was not at the correct concentration, almost reading 0 ppm. COS. Sanitizer remade for sink. CA: When manual warewashing, the sanitizer shall be at the appropriate concentration.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed the back door did not close all the way. CA: Exterior openings shall be self-closing and tight fitting.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed leak under hand sink and at faucet at 3-compartment sink. CA: Plumbing systems and fixtures shall be maintained in good repair.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of debris on floors and under equipment, especially the walk-in cooler. CA: Facility shall be clean and cleaning frequency shall be enough to prevent accumulation.
