Observed multiple TCS foods (Deli Meat 47 F, Deli Meat 48 F, Deli Tuna 46 F, Ambient 48 F) stored in walk in cooler above 41 degrees Fahrenheit. CA: Discussed cold holding temperatures, temperature monitoring and temperature logs with PIC. It was unable to be determined if the walk in cooler had been properly functioning within the last 4 hours. PIC discarded all TCS foods cold held in walk in cooler and contacted a licensed cooler technician for service. PIC and CFSM agreed on a limited menu during lunch hours to be reassessed by the Health Department later in the day. The walk in cooler must be approved by the Health Department prior to being used to cold hold TCS foods.
