6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS foods (chicken salad=44°F, sliced cheese=50°F) cold held above 41°F in prep top cooler. CA: Temperature control for safety food shall be maintained at 41°F or below or 135°F or above COS: Chicken salad and sliced cheese were found to be out of temperature for less than 4 hours. PIC chose to place foods into walk-in cooler to rapidly cool to 41°F before serving.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed plumbing at hand sink in dish area in disrepair. PIC states that using hand sink results in water on the ground due to drainage issues. CA: Plumbing shall be maintained in good repair. COS: No correction on site can be noted. PIC must have plumbing issue at the hand sink in the dish area repaired. Health dept will return to recheck.
