15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(b) - cutting surfaces (c)
Observation: Observed multiple cutting boards in poor repair and in need of replacement.
Corrective Action: Discussed replacing cutting boards when they are no longer able to be properly cleaned with the PIC. Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they cannot be resurfaced. The PIC discarded the cutting boards and will order more.

Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observation: Observed ice machine in main kitchen area broken and in need of repair.
Corrective Action: Discussed having the ice machine repaired or replaced with the PIC. The ice machine is currently scheduled for maintenance. All equipment must be kept in good repair. The facility will purchase ice from approved sources to be used in ice baths until the ice machine can be repaired. This will be rechecked by the Health Department.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observation: Observed residue accumulation on gaskets in reach in cooler and freezer.
Corrective Action: Discussed cleaning frequency of nonfood-contact surfaces with the PIC. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. The PIC will have the gaskets cleaned and increase cleaning frequency.
